Food Hygiene & HACCP
From 1 January 2006, the new EU food hygiene legislation has applied throughout the UK and affects all businesses that are involved with food throughout the food chain from farmers to manufacturers, retailers and caterers.

The new legislation modernises, consolidates and simplifies the previous EU legislation and focuses controls on what is necessary for public health protection.

The new food hygiene legislation also requires businesses producing food to have a documented food safety management system in place, based on Hazard Analysis and Critical Control Point principles (HACCP).

The Food Standards Agency oversees local authority enforcement activities for food law. It sets and monitors standards and audits local authorities' activities to ensure enforcement arrangements are proportionate, consistent and transparent. Powers to enable the Agency to monitor and audit local authorities are contained in the Food Standards Act 1999.

Training on the EU food hygiene legislation includes a range of courses including CIEH Award courses.
