Course Descriptor:-
Ideal for food business owners, middle and senior managers in the food industry, supervisors looking to expand career opportunities or trainers looking to widen their portfolio. By the end of the course and assessment, successful candidates will be able to effectively manage food safety in their business, implement their own food safety management system and design their own training programmes for staff (with suitable training skills).
The course syllabus covers the following topics:-
- An introduction to food safety management
- Compliance with legislation and industry codes of practice
- Classification of food safety hazards
- Microbiology
- Bacterial food poisoning and food-borne diseases
- Non-bacterial food poisoning
- Food storage and temperature control
- Pest control
- Personal hygiene
- Communication and training of food handlers
- Food safety management systems (inc HACCP)
- Design and construction of food premises and equipment
- Food Preservation
- Cleaning and disinfection
Candidates opting for the RIPH qualification are required to complete a 2.5 examination at the end of the course.
Candidates opting for the CIEH qualification must pass 2 work based assignments and a 2.5 examination at the end of the course.
