Level Three Food Safety Course

- Chartered Institute of Environmental Health/RIPH Intermediate Food Hygiene Certificate
- Royal Institute of Public Health Intermediate Certificate in Food Hygiene and Safety

This level three certificate programme addresses the roles and responsibilities of the supervisor in relation to safe food handling practices.

The syllabus is designed to develop a knowledge and understanding of the factors that influence the safe handling of food. This ensures that supervisors and potential managers are aware that, in addition to traditional hygienic practices, they should seek to identify and prevent food safety hazards at all stages in food production, preparation, and service, thus enabling them and the staff they manage to operate in a safe, hygienic and efficient manner.

The course is usually run one day per week, for four consecutive weeks (last session half day only for review and examination). This pattern of attendance allows for private study between sessions.

- Food Poisoning
- Bacteriology
- Prevention of Contamination
- Personal Hygiene
- Premises and Equipment
- Pest Control
- Cleaning & Disinfection
- Legislation

Examination
(RIPH) Candidates are required to sit a two-hour written examination or
(CIEH) a 60 question, one and a half hour multiple choice examination.
