CIEH Level 2 Certificate in Food Hygiene
Duration:
One Day
The aim of the training is to give food handlers an appreciation of the fundamentals of safe food hygiene practices, in line with the principles set out in the Chartered Institute of Environmental Health’s syllabus.
On successful completion of the examination at the end of the course, trainees will be awarded a nationally recognised certificate by the C.I.E.H.
The programme will include:
- Understand the principles of food hygiene and apply this knowledge in the workplace
- Understand basic food microbiology and be able to state the main sources and methods of transmission of food poisoning and food borne disease
- State how food can be contaminated and the methods of prevention
- State the conditions needed for bacterial growth and demonstrate an understanding of the need to minimise it
- Understand the reasons for good personal hygiene and be aware of actions to demonstrate good practice
- Understand personal responsibility including those for reporting illness, pests and faulty equipment
- Be aware of the practicalities involved in applying the principles of good food hygiene in the workplace
- Understand the reasons for good food hygiene and the costs of poor food hygiene with specific reference to legislative requirements
- Understand the principles involved and the methods used in cleaning and disinfection
- Be able to identify a variety of food pests in order to eliminate food contamination and to understand their personal responsibilities in assisting the employer in the prevention of pest infestation.
- Have an awareness of the various legal requirements which specify legal standards for premises and equipment, and the principles of good design and their impact on work practices.
The course would ideally suit any person that needs an understanding of the legal requirements for the safe handling of food incorporating issues of good practice based on those legal requirements
