Jamie Oliver's TV series focused on what most of us already knew, highlighting the old adage 'You are what you eat' .
Coincidence or not, since the programmes were aired, a lot of work has been done in many schools to regenerate the need for food education and turn around what was becoming, or already was, a national culinary embarrassment. As well as teaching new generations that cooking 'proper' food is not difficult, need not be time consuming, can be fun and is potentially far more tasty, it is a fact that a nutritionally balanced diet has a positive effect on health both physically and mentally.
Childhood and adult obesity as well as malnutrition as a result of a bad diet is of national concern. Parents obviously have a big part to play in encouraging a healthy lifestyle, teaching and demonstrating to their offspring the benefits of choosing a wholesome diet. Now, more than ever, people working with food have duty to understand the link between the food they produce and the health of their customers and to keep up-to-date with current recommendations and guidelines.
The CIEH Level 2 Award in Nutrition complements the well-established food hygiene qualifications and will give the opportunity for caterers to grasp the principles of nutrition that can help effect change for the better.
The course is a one day programme and concludes with a multiple choice exam.
On completion of the qualification, candidates will be able to understand:
- nutrition terminology
- that a nutritionally balanced diet has a positive effect on health
- that different groups of people require diets that suit their lifestyle
- the importance of accurate nutritional information being available on food products
- that food processing and manufacture can change the nutritional content of foods
- describe in general terms the requirements of the current legislation
